I mentioned a while back that our family joined the green smoothie movement. Well, thanks to pinterest, I discovered a new recipe that we've become addicted to. It's called a Greena Colada. And holy cow, it's muy bueno indeed. So, here's the recipe:
3/4 C seltzer water (reg. water works fine)
2 C spinach
3 T Coco Lopez Lite (find it near the cocktail drink mixes)
1/2 banana
2 C frozen pineapple (We use a tropical blend, cause it's cheaper.)
Blend until smooth.
Everyone in our little family LOVES it. Even Sethie. But Asher wanted nothing to do with it until Gramma Bartlett had the genius idea of freezing the smoothie into popsicles. I'm happy to report that Asher now *begs* me for a "green popsicle". And every time I give him one I feel like making this face:
Eeeeeexcellent!

Thank you for introducing me to this delicious smoothie! The popsicle idea is fantastic. I love it when kids think they are getting dessert when they are really getting spinach! Brilliant!
